Chocolate cupcakes

My son loves cupcakes so much, i have to make them every week =)  His favorite are chocolate ones!

Ingredients:

for cupcakes:

  • 80 g butter, softened
  • 150 g self-raising flour
  • 120 g caster sugar
  • 3 tbsp milk
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • cocoa powder

for the creamy icing:

  • 300 ml double cream
  • icing sugar
  • cocoa powder

How to make it:

  1. Preheat the oven to 180°C.
  2. Put the cupcake cases into the cupcake tin.
  3. Mix all the cupcake ingredients into a large bowl and beat until  smooth.
  4. Put the cocoa powder into a bowl and mix until combined.
  5. Spoon evenly between the paper cases.
  6. Bake for 20-25 minutes or until risen and golden brown.
  7. Cool the cakes until completely cold before icing.
  8. To make the icing, beat together all the icing ingredients to give a creamy thick icing, then smooth over the cold cupcakes=)
